Grilled Catfish and Healthy Dirty Rice
This week when I was have trouble thinking of something different to cook. Then it hit me! I hadn’t had fish in a while so I decided to out a healthy twist to some Louisiana fried catfish and dirty rice. This recipe was super simple and quick to make. I was in and out of the kitchen in 15 minutes.
Grilled Catfish Ingredients
- 1 catfish fillet
- Tony Chachere’s creole seasoning
- 2 tsp of olive oil
- 1 pack Uncle Ben’s brown minute rice
- 1/4 red onion
- 1/4 bell pepper
- 2 tsp of Tony Chachere’s creole seasoning
- 1/4 cup chicken broth (or veggie broth*)
- 1 tsp olive oil
