Grilled Catfish and Healthy Dirty Rice

           
This week when I was have trouble thinking of something different to cook. Then it hit me!  I hadn’t had fish in a while so I decided to out a healthy twist to some Louisiana fried catfish and dirty rice. This recipe was super simple and quick to make. I was in and out of the kitchen in 15 minutes. Grilled Catfish Ingredients
  • 1 catfish fillet
  • Tony Chachere’s creole seasoning
  • 2 tsp of olive oil
Instructions Place a skillet on the stove on high heat and let it get hot. While your waiting, take one tsp of olive oil and drizzle it on both sides of your catfish filet, then coat each side of the fish with Tony Chachere’s creole seasoning.  Add the other tsp of olive oil to your pan then place your fish in the pan. You might want to open a window to turn on your vent fan, because it’s going to get a little smoky! The whole point is to sear the fish on both sides. Let it sear on one side for about 3-5 minutes, then flip it on the other side and do the same thing until your fish is cooked to your liking.   Healthy Dirty Rice Recipe Y’all know I don’t play with things out of a box so I wasn’t about to buy the premade stuff. I’m a vegetarian (well technically pescaterian, but whatev) so I wasn’t going to add any meat to the rice either. Did you know that traditional dirty rice is cooked with chicken livers which gives it its “dirty” color? Any hoo, I used some Uncle Ben’s brown minute rice ( I cant cook rice to save my life!) and veggies and some seasoning. I literally made this recipe up. Ingredients
  • 1 pack Uncle Ben’s brown minute rice
  • 1/4 red onion
  • 1/4 bell pepper
  • 2 tsp of Tony Chachere’s creole seasoning
  • 1/4 cup chicken broth (or veggie broth*)
  • 1 tsp olive oil
* I know since I’m a vegetarian, I’m supposed to use veggie broth but have you ever tasted that stuff?! Its TERRIBLE. Instructions Dice your red onion and bell peppers and saute with 1tsp of olive oil in a pan on low until the onions are translucent. While that’s going, pop your minute rice in the microwave for 90 seconds. After your veggies are sauteed, add your chicken broth and 2 tsp of Tony Chachere’s creole seasoning, stir and let it cook for a bit 3 – 5 minutes on low.  Next, place your cooked brown rice in a bowl and add your chicken broth/veggie mixture, stir it and season to taste. Boom!  Healthy dirty rice.     I had my grilled catfish and dirty rice with a big bowl of Greek salad. It’s in a little cute bowl in the pic, but I actually ate an entire mixing bowl worth of salad.  It consisted of green leaf lettuce, diced red onion, diced bell peppers, crumbled feta and a home made lemon, herb dressing.
