Sporty Afros in the Kitchen: Chipotle Bowl Copycat Recipie

Cinco de Mayo is just around the corner.  It’s no secret that Sporty Afros LOVES Chiptole. We will likely be there to celebrate Cinco de Mayo too! We never get sick of Chiptole. 
Whenever I find a dish I can’t get enough of I try and recreate it at home. Its a lot more cost effective and I can eat as much as I want. My favorite thing  (well, my latest favorite)  is the vegetarian bowl with rice, black beans, pinto beans, pico de gallo, cheese and guacamole. FYI, that’s only around 700 calories and I can usually make 2 meals out of it so its really only 350.
Here is what I made and how I made it: Cilantro Lime Rice Here is the recipe I used 1 teaspoon vegetable oil or butter 2 tsp. fresh cilantro 2/3 cup white basmati rice 1 cup water 1/2 teaspoon salt 1 Lime In a 2-quart heavy saucepan, heat oil or butter over low heat, stirring occasionally until melted. Add rice and lime juice, stir for 1 minute. Add water and salt, bring to a full rolling boil. At boiling, cover, turn down to simmer over low heat until rice is tender and the water is absorbed, about 25 minutes. Fluff rice with a fork.   Black and Pinto Beans I’m sure these would taste a lot better if I made the from scratch, but that takes way too long so I cheated. Here is my cheater’s recipe for home made beans:
  • 2 cans black beans
  • 2 cans pinto beans
  • 1/2 onion
  • 1/2 tomato
  • 1 jalapeno
  • 2 cloves garlic
  • 1 bay leaf
  • salt
  • pepper
Instructions: I opened and drained my beans and added them to my crock pot with a little water.  Then, I chopped and added my veggies and my bay leaf. Last, I sprinkled some salt and pepper over my beans, put the crock pot on high and added the lid. The only reason I used a crock pot is because I was about to go for a run so I let them cook while I was gone. Otherwise I would have added all of this to a pot on the stove. I let them cooked for 2 hours while I was gone.   Pico De Gallo Recipe:
  • 1 tomato
  • 1/2 onion
  • 1 tbs of cilantro
  • 1/2 jalapeno
  • a little lime juice
Instructions: Chop all of your veggies and mix them together then add your lime juice.   Guacamole Recipe:
  • 1 avocado
  • 1/2 onion
  • 1/2 jalapeno
  • 1 tsp cilantro
  • salt
  • pepper
  • garlic powder
Cut your avocado in half, take out the seed and scoop the remainder into a bowl. Chop your veggies and add to the bowl. Add 1tsp of lime juice,  salt, pepper and garlic power to taste and mix it together. Now its time to assemble your bowl! Add your rice, beans, pico and guacamole and top off with a little cheese. Chipotle uses  a mix of freshly shredded white cheddar and jack but I didn’t have that so I just used some mild cheddar cheese.
