Vegetarian Lasanga Recipe    By SportyAfros.com  I've been cooking up a storm this week. I ended up making some vegetarian lasagna. I didn’t really follow a specific recipe. I used my mom’s traditional lasagna recipe, omitted the meat and added a meat substitute and some fresh spinach. Here are the ingredients I used:  Ha Ha you can see my pajama pants in the bottom of the pic.. What can I say, I like to be super comfy when I cook. Ingredients:
  • 1 chopped onion
  • 2 chopped bell peppers
  • 3 cloves of minced garlic (I forgot to add them to the picture)
  • 1  chopped jalapeno ( I forgot to add this to the pic too!)
  • 1 chopped ancho pepper
  • 1 box ground beef substitute
  • 2 cups packed with fresh spinach
  • 1 jar pasta sauce
  • Whole wheat lasagna noodles
  • Low fat ricotta cheese
  • Skim milk mozzarella cheese
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbs oregano
  • 1 tbs basil
  • 1/4 cup parmesan cheese
  • 1 egg
  Directions: Boil your lasagna noodles according to the instructions on the box.  Rinse your cooked noodles with cold water in a strainer and set out on wax paper. Next, add 1 tsp of olive oil to a large pot  and add your minced garlic and onions and sautee until tender, then add your bell peppers, ancho pepper, jalapeno, ground beef substitute, chopped spinach, marinara and spices sauce and let it simmer for 5 – 10 minutes. Mix 1 egg with your ricotta cheese and 1/4 cup Parmesan and set aside. Now it’s time to put together your lasagna! Spray your baking dish with pam and then add a little of your “meat sauce” on the bottom. Then add a layer of lasagna noodles, the ricotta cheese mixture and a sprinkle of mozzarella, and your “meat sauce”, then repeat – add a layer of lasagna noodles, the ricotta cheese mixture and a sprinkle of mozzarella, then add your “meat sauce”, then add another layer of lasagna noodles, the rest of your “meat sauce” and top it off with a layer of mozzarella cheese. Bake in the oven at 350 degrees  for 25 – 30 minutes. It didn't come out super pretty, but it was yummy! If you are not vegetarian you can substitute the veggie meat for ground turkey or lean organic beef. However, in this recipe you can't taste the difference between regular "real" meat and "fake" meat.
