Vegetarian Lasanga Recipe

I've been cooking up a storm this week. I ended up making some vegetarian lasagna. I didn’t really follow a specific recipe. I used my mom’s traditional lasagna recipe, omitted the meat and added a meat substitute and some fresh spinach. Here are the ingredients I used:

What can I say, I like to be super comfy when I cook.
Ingredients:
- 1 chopped onion
- 2 chopped bell peppers
- 3 cloves of minced garlic (I forgot to add them to the picture)
- 1 chopped jalapeno ( I forgot to add this to the pic too!)
- 1 chopped ancho pepper
- 1 box ground beef substitute
- 2 cups packed with fresh spinach
- 1 jar pasta sauce
- Whole wheat lasagna noodles
- Low fat ricotta cheese
- Skim milk mozzarella cheese
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tbs oregano
- 1 tbs basil
- 1/4 cup parmesan cheese
- 1 egg
